By describing each of their aromatic facets we learn how to master and memorize them. <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.15pt;\">Cinnamon, for example, has spicy, woody, leathery, sweet, almond-like, round, hot, resinous <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.2pt;\">aspects, sometimes even pharmaceutical ones, such as camphor. Isobutyl Methoxi Pyrazine <\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">(IBMP) is responsible for th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\"> vegetal note in certain wines, it develops green facets that evoke th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: -0.05pt;\">smell of raw vegetables such as green beli peppers and green beans, ivy leaves, when th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: -0.05pt;\">\u00e8<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: -0.05pt;\"> IPMP (Isoprpropyl Methoxy Pyrazine) also responsible for a vegetal notes in wines, develops asparagus <\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">aspects, fava bean pods, sulfur notes, and having a strong dry earthy character. Once we have <span style=\"letter-spacing:.25pt\">acquired a perfect knowledge of these indicators we are capable of identifying them in th<\/span><\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.25pt;\">e <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.25pt;\">aromatic complexity of a wine. Without this previous exposure wine tasting appears to be a <\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">random practice.<\/span><span lang=\"EN-US\"><o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 9.6pt 0.7pt 0.0001pt 0.5pt; text-align: justify; text-indent: 11.05pt; line-height: 14.65pt; background-image: initial; background-attachment: initial; background-size: initial; background-origin: initial; background-clip: initial; background-position: initial; background-repeat: initial;\"><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: -0.1pt;\">The smelling sessions have a dual purpose : to structure our smelling universe and to teach us to <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.1pt;\">describe smells with an accurate use of th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.1pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.1pt;\"> rich vocabulary at our disposal. letter-spacing: 0.15pt;\">e <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.05pt;\">impression is caused by th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.05pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.05pt;\"> sum of twenty or thirty different molecules.<\/span><span lang=\"EN-US\"><o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0cm 0.25pt 0.0001pt 0.7pt; text-align: justify; letter-spacing: 0.05pt;\">memorize them.<\/span><span lang=\"EN-US\"><o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-align: justify; text-indent: 11.3pt; line-height: 14.65pt; background-image: initial; Wine is so <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.05pt;\">magical and complex that we can say that it includes ten or several hundred different cassis or <\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">raspberry aromas. The cassis aroma perceived will vary from one bottle to another. The grapes combinations, th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\"> assemblage, th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\"> quality of th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\"> soil, th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\"> climate, th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\"> wood, even th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\"> oxygenation<\/span><span lang=\"EN-US\"> <\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.2pt;\">prior to serving th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.2pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.2pt;\"> wine, will influence th<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.2pt;\">e<\/span><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.2pt;\"> olfactory variability of this aroma. Sometimes it <\/span><span lang=\"EN-US\" style=\"font-size: 11pt;\">appears to be more or less ripe, green, sweet, acid, bland, sharp, round, dry, evoking memories of <span style=\"letter-spacing:.15pt\">liqueur, eau-de-vie, jam, jelly, sorbet, sour sweets, syrup, coulis, cream filling, fresh fruit, dry <\/span><span style=\"letter-spacing:-.2pt\">berries, cassis leaves, etc.<\/span><\/span><span lang=\"EN-US\"><o:p><\/o:p><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 14.4pt 0.25pt 0.0001pt; text-align: justify; text-indent: 12pt; line-height: 14.65pt; background-image: initial; background-attachment: initial; background-size: initial; background-origin: initial; background-clip: initial; background-position: initial; background-repeat: initial;\"><span lang=\"EN-US\" style=\"font-size: 11pt; letter-spacing: 0.05pt;\">In addition, perception is a personal experience.
